Mac and Cheeze/Pesto Pasta





This was the best Mac and Cheeze I've made to date! I used this recipe: http://vegweb.com/index.php?topic=7464 I also added some nut yeast, pepper and salt. I didn't use the pam. Next to it is the Pesto pasta. I used the pesto recipe from VwaV. Lovely!

This stuff is UNREAL. SOO amazingly good. I like to add cajun spice to mine sometimes.

Also a very good recipe. Next time I make this I'm going to use slabs of tofu so I can make sandwiches with the leftovers.

Orecchiette with Chery Tomatoes and Kalamata Tapenade



This is a lovely comforting pasta dish. I LOVE pasta. I like this dish alot - Very easy to make and super yummy!

Tempeh Reuben



This is my first time using tempeh and I have to say its delicious! Very Very nice. I went on after this to make tempeh bacon, which I used in a ''bacon'', lettuce and tomato sandwich. Unfortunately, I don't have a picture.

Fried Rice

Fried Rice with seitan. Sprinkles of sesame seeds on the top.

Shells and Chreese

This is my version of a ''jazzed up'' shells and chreese.





''Jazzed up'' with garlic, cayenne pepper, marg, roasted veg with rosemary and thyme. Topped with Black pepper and Nutritional yeast.

''Cheeesy'' pasta bake!

This is a pasta bake with pasta and veg with a tomato and garlic sauce. Topped with ''cheese'' sauce and nutitional yeast. ( I used the ''Alfreda Sauce'' from ''Vegan with a Vengeance'.)





It was dark so I couldn't get a good picture.

This is basically mixed veg and garlic with spaghetti tossed in balsamic vinegar.

Pie and Failed Veggie Loaf :[ and Bento

I made a Veggie Loaf using Jennifer Shmoo's http://www.veganlunchbox.com/loaf_studio.html (Magical Loaf Studio). It's where you can create your own personalised recipe for a veggie loaf.
I haven't even made a meatloaf before so i wasn't sure how it would turn out. I burned it abit and it was abit of a disaster as it didn't stay intact when you cut it into slices.



I also made a pie using chunky vegetables, TVP and onion gravy. It was soo good.
I had that with the veggie loaf mashed up with ketchup :]







I had some left over pastry so i made a quick cornish style pasty using some of the mashed up veggie loaf and onion gravy .





I just came back from Leeds Festival two days ago so I'm stocking up on the comfort food at the moment. It was a great weekend. Could have been better without the monsoon esque rain on the sunday though!

Todays Dinner and Bento (Work)

Lasagne made with polenta. I put a bit of leftover spagetti in the layers too. Topped with a ''cheese'' sauce (which you cant see) After baking i put some tomato sauce on top too ( wasn't tomatoey enough) with a nice sprinke of nutritional yeast.

I should have taken to the picture before i put the cling-film on the pots....
Here we have:
Small section-Steamed hearts and crosses carrots and brocolli.
Big section-Tofu Nuggets (recipe from here - http://www.fatfree.com/recipes/tofu/baked-tofu-nuggets (I put curry powder and chilli powder in mine also)), container of ketchup and mustard(on the left) and container of veg curry(on the right).

My Bento style Lunch box came today:


and this is what i packed:



Large section:
Rice balls- one with soy and one with ketchup and nori eyes and smiles :]
Veg Spring rolls and a container of hoi sin sauce on the side

Small section:
Veg fried rice with ''Cheatin' Ham'',
Small Animal container of soy sauce.
